Hey Hey friends!! Hope you had a good Memorial Day weekend. My husband made this AMAZING dish in his smoker last weekend, so I thought I’d share it with you. Swineapple, you say? Yes!! It’s a hollowed out Pineapple, stuffed with boneless pork loin then wrapped in bacon. So delicious!!

- I used pork loin, or hollywood ribs. Some use country ribs.
- My seasonings
- marinating it over night with lots of garlic and soy sauce
- 1 pineapple
- as you can see, the second one is better.
- save this for the fried rice
- It is ready to go
- I had some loin left over, and bacon, so I wrapped them up and put them in about 1:30 before it was done
- Caution. You cannot eat this picture
- Purple onions, pineapple, and eggs
Swineapple
Ingredients:
Boneless Pork Ribs or Pork Loin
Quality THICK CUT Bacon
Whole Pineapple
Seasoning of Choice ( We use a lot of Tony Chachere’s made not far from where we grew up in Louisiana!)
Toothpicks
Smoker (We have this Electric Smoker that my husband LOVES!!)
Directions:
Marinate the pork overnight in your choice of marinade. We used soy sauce and minced garlic.
Start your smoker pre-heating to 240 degrees while preparing pineapple.
To prepare whole Pineapple, cut the bottom off and set aside for use later. Leave the top of the pineapple in tact. Stand it up on the bottom cut part, and peel the outside using a sharp knife, going from the top to the bottom. Hollow the pineapple out using a knife and an ice cream scoop.
Stuff marinated pork into the hollowed out pineapple, put the bottom of the pineapple back in place and use toothpick to secure it.
Wrap thick cut bacon all the way around your pineapple, even on the bottom. Secure with toothpicks.
Place in your pre-heated smoker, cook for 5 hours, adding wood chips twice throughout cooking time.
You will have a large bowl of pineapple left. We used some for fried rice and the rest can be frozen for smoothies or fruit salad!
This Swineapple recipe is extremely decadent but oh so good. I can’t imagine having it more than maybe once a year but for a special occasion is will really wow your friends and family.

If you don’t have a smoker, how can you do this in an oven?

Not sure you can make it in the oven. If you do, try the convection oven setting only about 250.
A grill would suffice too.

Just mix the soy sauce and garlic, then add any other seasonings you want to it.
Sorry, i thought there was a certain amount of soy sauce and how many cloves to mix and was wondering the amounts.

From the photos it looks like you cooked the pork loin wrapped in bacon before putting it in the pineapple?
Wanting to make this recipe this weekend but want to make sure I don’t mess it up. 🙂
This confused me too, but on looking at the photos, it seemed they chunked the loin and marinated it prior to assembly and smoking. Really should have said they did that. Gonna make this in 2 weeks, I’ll put up a comment then. Pics if it lets me.
Going to try making this today but we are cooking the pork first. Too many comments I read on other feeds say the pork comes out mushy and steamed. Pork has been marinating in Jamaican Jerk seasoning for 2 days. Going to grill it then stuff the pineapple with that. Still going to smoke it but it shouldn’t take quite as long.
